What
is Natural Beef anyway?
USDA defines natural beef as a product that is minimally processed
with no artificial ingredients or preservatives.
Our definition
of "natural" goes beyond that of the USDA. Our natural meats
come from animals that are born and raised on our ranch (traceability)
and are never, fed animal byproducts of any kind. No fed antibiotics
are given to our cattle.

Is
the ground beef lean?
Yes. Our ground beef is 90/10 lean beef, or 90% lean. Our customers
tell us, and we agree, that the ground beef is excellent.

Why
do you age your beef?
We naturally dry age our meat for a minimum of 14 to 16 days to intensify
the flavor and naturally increase the tenderness. Many beef suppliers
cut and package the meat without aging the meat. At Mill Creek Natural
Beef, we consider aging the meat a vital step, and we take this extra
step to produce and process our beef the old-fashion way.

Is
you beef grass fed, or is it grain fed?
It is both!
One hundred
percent grass-fed beef is gaining interest and seems to be a trend.
In some ways that’s good, because all beef consumption is beneficial
for the beef industry. The United States is known world-wide for it’s
high quality, grain fed beef. Unlike other countries, we can produce
quality beef, because we have the resources to graze cattle on grass,
and finish them on grains. American consumers have come to love the
taste of grain fed beef. It’s the high quality you are used
to eating.
At Mill Creek
Ranch, our beef animals spend most of their lives on lush mountain
grass. They are grass-fed animals. Yet we choose to put them on a
natural grain product for the last three months, to give flavor and
taste to the beef that we have all come to love.
We offer you
the best of both – grass fed and grain fed!
We have requests
for 100% grass-fed beef, and we will gladly provide it in quarter
or half quantities, in the fall.

Why is Mill Creek Natural Beef only available in the spring?
When we had the Mill Creek Market, we had beef available throughout the year. From that experience we found that the best product that we can offer you is beef in the spring. Why? Because it just makes sense. Our cattle are born and raised on our ranch, and when weaned from their mothers in the early spring, they go onto the lush green grass on our private pastures, then onto the high mountain feed on the BLM and Forest Service permits. We gather our cattle in the fall. Mill Creek Natural Beef cattle are then placed on a grain finish product in Delta, Colorado. Our beef is grown with the natural cycle of the seasons of Gunnison ,,,much like the Colorado product Olathe Sweet Corn! This delicious and sweet corn is only available during the season that it is ready. The same applies with our quality beef.

What
kind of packaging should I expect?
If you order a half or a quarter of beef, you will call the butcher
and have your beef custom cut and packaged. Your meat will be packaged
in white freezer paper and the ground beef will be packaged in Mill
Creek sleeves unless otherwise specified. You can specify how many
steaks per package, and how many pounds per roast.
If you order
the Mill Creek Hearty Pack or Ranch Variety Pack, the meat will be
vacuum packed in clear wrap.

Any
tips for me on custom cutting if I order a half or a quarter of beef?
Our butcher will work directly with you on your order. You can choose
how many pounds each on your roasts, how thick you want your steaks,
and how many steaks wrapped in each package. Some people prefer two
steaks per package, while single people often prefer one steak per
package. We have found that people often have their steaks cut too
thick. We recommend steaks not cut thicker than 1 inch, and here at
the ranch, we like and recommend 3/4 inch steaks.
When you order
a half or a quarter of beef, you can choose whether certain pieces
of meat are cut into steaks or roast. For example, some consumers
prefer a rib roast over rib steaks. You have that choice. Not all
cuts of meat are your most tender, for example, the chuck steaks or
roasts come from the shoulder area. Some people prefer to have the
chuck ground into ground beef. Again, it's your choice.

Can
you tell me about freezers? How much meat will fit into my freezer?
One cubic foot of freezer space will hold approximately 22 to 28 pounds
of meat. This is about half of the freezer above the refrigerator.
A quarter beef requires a five cubic foot freezer, and a half will
need an 8 cubic foot freezer.

What
about shipping?
We often ship beef, and ship it successfully. We ship in specially
designed insulated boxes and in most cases will use a gel pack for
coolant, not dry ice. We ship all meat overnight. Within Colorado
we use UPS and elsewhere in the U.S. we use DHL. We pass all shipping
and handling expenses on to you. When we ship beef, we will talk with
you personally to determine shipping and handling charges, based upon
the weight of the package, and zip code.
